1 T unsalted butter
1 small onion, minced
1 small clove garlic, minced
4 oz cream cheese, softened
1 t minced fresh thyme leaves
2 oz cheese, shredded (1/2 cup)
Salt & pepper

Directions:
Directions:
Heat butter in skillet over low heat until melted; add onion and saute, stirring occasionally, until deep golden brown, 15-20 mins. Stir in garlic & cook until fragrant, about 30 sec longer; set aside. In med bowl using hand mixer, beat cream cheese on med speed until light & fluffy, 1 min. Stir in onion mixture, thyme, and cheese; season w/ salt & pepper, set aside.
Broiled Asparagus & Smoked Mozzarella Cheese - To cook asparagus for filling, toss trimmed spears w/ 2 t olive oil, salt & pepper to tast on rimmed baking sheet, then broil until tender and browned, 6-8 mins. Shaking pan to rotate spears. (Use smoked mozzarella cheese) Spread filling on chicken and arrange spears on top & roll.

Roasted Mushrooms & Provolone Cheese w/ Rosemary - Toss 10 oz stemed and quartered white mushrooms w/ 2 T olive oil and salt & pepper to taste on large rimmed baking sheet, then roast at 450, turning once, until well browned 20-25 mins. Add 1 T chopped rosemary and Provolone cheese to mixture.
Gorgonzola Cheese w/ Walnuts and Figs - 2 T dried cherries or cranberries can be substituted for the fig. Stir in 1/4 cup chopped toasted walnuts, 3 med dried figs, stemmed and chopped (2 T), and 1 T dry sherry along w/ gorgonzola cheese into filling mixture.
