1 cup yellow corn meal
1 cup sifted flour
1/4 cup sugar
1/2 t salt
4 t baking powder
2 eggs
1 cup milk
1/4 cup oil

Directions:
Directions:
Combine dry ingredients into bowl. Add egg, milk and oil. Beat until smooth, about 1 min. Do not overbeat. Bake in greased 8 in sq pan or skillet at 425 for 20 to 25 min.
