1 lb green beans
11/2 tsp salt
3 to 4 tsp of green onions diced
3 tbsp of olive oil
1 tbsp of rice vinegar
2 tbsp grainy European style mustard
1/2 tsp black pepper
1/2 cup black walnuts


Directions:
Directions:
Bring a large pot of water to a boil with 1 tsp of salt. Trim beans and cut them into 1 inch pieces. Plunge them into boiling water and cook for 5 minutes or until tender but still firm and bright green. Drain, run under cold water and spread on an absorbent towel. Mince the green union put it in a medium sized serving bowl. add olive oil, vinegar, mustard, 1/2 tsp salt and pepper and 1/2 cup of black walnuts. Blend with a fork until salt is dissolved. Add beans and stir to coat them all over with dressing. Chill and serve immediately.
