1/2 c. chopped red or yellow onions
1/2 c. chopped bell pepper, optional
chopped jalapeno peppers, or hot sauce, optional
1 tsp. minced garlic
3/4 tsp. salt
2 tbsp. fresh lime juice
1/4 c. packed fresh cilantro leaves, or 1/2 tsp. dried cilantro
1-1/2 .bs plum tomatoes, chopped or 1 28oz can whole tomatoes, drained

Directions:

Put all the ingredients in a food processor and pules about 15 times. The mixture should be slightly chuncky. Transfer to a bowl, cover, and set aside until ready to use.
