1/3 c. olive oil, 1 tbsp. red wine vinegar, 1 tsp. cider vinegar, 1 garlic clove, minced, 1/2 tsp. ground cumin, 1/2 tsp. dried oregano, 1/2 tsp. salt, 1/4 tsp. sugar, 1/8 tsp. ground red or cayenne pepper, 2 cans (15 oz each) balck beans, rinsed and drained, 1 can (8 ounces) whole kernel corn, drained, 3/4 c. chopped red onion, 1/2 c. chopped sweet red pepper

In a bowl, mix the first nine ingredients until well blended. Add the beans, corn, onion and red pepper, toss well. Cover and chill 8 hours or overnight
