3 medium, skinless, boneless chicken breasts, cut in cubes
1 cup onion, chopped
2 Tbsp. olive oil
1 can (14 1/2 oz) diced tomatoes with garlic and olive oil
2 cups frozen brocolli florets, thawed
1 1/2 cups shredded mozzarella cheese

Directions:
Directions:
Cook chicken and onion in skillet in oil over medium high heat, 5 minutes. Add undrained tomatoes and cook 5 minutes, or until slightly thickened. Add broccoli and simmer 3 to 5 minutes. Sprinkle with cheese and heat until melted. Serve over rice or pasta, if desired. Serves 4 to 6.
