1/2 red pepper, chopped
1/2 sm. onion, chopped
2 cloves garlic, chopped
2 cans White Shopeg Cord, drained
1 block Monterry Jack Cheese w/jalapeno peppers
1/2 c. mayonaise
Cayenne Pepper

Directions:
Directions:
Saute pepper, onion and garlic in small amount of olive oil. Add corn and saute a few minutes more. Remove from heat and add cheese, mayonaise and Cayenne pepper to taste (about 1/2 tsp.). Stir together. Put in casserole dish and bake at 350F for 25 minutes.

Serve with corn chips.
