1/2 cup diced prosciutto.
1/4 cup plus 2 tbsp butter.
2 eggs beaten.
2/3 cup chopped green onions.
2/3 cup chopped sweet red pepper.
2 2/3 cups cooked rice.
2/3 cup water.
1/4 cup soy sauce.

Directions:
Directions:
Melt butter in a large skillet. Add eggs and cook over medium heat until almost set. Stir in green onions, red pepper and rice. Cook stirring frequently for about 5 minutes or until lightly browned. Add water and soy sauce and cook for two minutes.
