2-1/4 c. water, plus more as necessary
1/2 c. quick-cooking yellow or white grits
1/2 c. shredded Cheddar cheese (2 oz.)
1/4-1/2 tsp. chili powder (your taste)
1/2 tsp. ground cumin
1/2 tsp. dried oregano
1/2 tsp. salt
1/4 tsp. garlic powder

Directions:

Bring water to a boil in a large saucepan, preferably nonstick, set over high heat, and stir in grits. Cover and reduce heat to low. Simmer, stirring frequently, until water has been absorbed, about 5 minutes.

Stir in the cheese, chili powder, cumin, oregano, salt and garlic powder and cook, stirring constantly, until well-blended and bubling, about 2 minutes. If the grits become too thick and stick to the pan, add more water, 2 tablespoons at at time, th thin them out. Let stand off teh heat 3 minutes before serving.

You can cut the fat considerably by using low-fat or fat-free cheese in the recipe. The spices give these grits and unexpected kick. My family loves it!
