4 egg whites
½ c sugar
1 ½ cups coconut
¼ cup sugar
2 tbsp. flour
1 grated lemon rind
1 tsp. Almond extract

Directions:
Beat whites till soft. Add pinch of salt and gradually add sugar beat into stiff peaks. In another bowl mix remaining ingredients. Fold whites into this mixture. Put in muffin liners and bake at 300 for 20-25 minutes until golden.
