1 ½ C Brown Sugar

1 C lard or shortening (I use butter)

½ C Buttermilk (1:1 plain yogurt and water mixed can be substituted)

1 t vanilla

4 C quick cooking oats (or 3 C oats, ½ c golden raisins and ½ C chopped pecans)

1 ¾ all purpose or whole wheat flour (or mix 3:1 white to whole wheat)

1 t baking soda

½ t salt

Directions:

Heat oven to 375 degrees. Mix brown sugar, shortening, buttermilk and vanilla. Stir in remaining ingredients. Dough will be stiff.

Shape dough into balls and place on an ungreased cookie sheet. Flatten cookies with the bottom of a glass dipped in water.

Bake until golden brown, 8 to 10 minutes. Cool slightly and remove from cookie sheet.
