3&1/2 cups all-purpose flour
2 cups sugar
2 cups butter, softened
1 Tbsp. baking powder
1 tsp. baking soda
1 tsp. vanilla
1 cup flaked coconut

Directions:
Directions:
In large mixer bowl, combine flour, sugar, butter, baking powder, baking soda, and vanilla. Beat at low speed, scraping bowl often, until well mixed, 3 to 4 minutes. Stir in coconut. Divide dough into halves; shape each half into a 12x2-inch roll. Wrap in waxed paper. Refrigerate until firm, at least 2 hours.

Heat oven to 350 F. Cut rolls into 1/4-inch slices. Place 2 inches apart on ungreased cookie sheets. Bake for 9 to 14 minutes, or until edges are lightly browned. Cool slightly; remove.

After I've sliced these fairly thin, I sprinkle them with granulated sugar, then bake as directed.
