6 medium russet potatoes 1 small onion, diced 2 eggs 1/3 cup flour salt & pepper to taste
Grate the potatoes in large bowl. Fill the large bowl with cold water. Let potatoes soak 10 - 15 minutes. Drain; add diced onion, eggs and flour. Mix. Salt & pepper. Heat oil in large skillet. Spoon potato mixture in hot oil until golden brown.
