Chop: onion, bellpepper, celery, parsley, green onion tops
1 lb crawfish tail meat
l small can sliced mushrooms
Eggs beaten with milk, salt and pepper to taste
Sliced jalepeno cheese

Directions:
Directions:
Saute vegtables in butter until wilted. Saute crawfish, add vegtables, then mushrooms. Pour eggs over mixture and cook over a low fire until done. Add cheese to the top of eggs and serve when melted.
