1 stick butter
1 pkg. stove top stuffing
6 cups zucchini, peeled and cubed
1 cup sour cream
1 cup shredded carrots (optional)
1 can cream of mushroom soup
1 small onion

Directions:
Directions:
Melt butter and mix with stuffing. Layer bottom of 13X9 pan with half stuffing mixture.
Saute zucchini and onion for about 10 minutes.
Combine all other ingredients with zuc/onion.
Pour over stuffing. Sprinkle remaining stuffing on top.
Bake at 350* for about 40-45 minutes
