2-3 cans sweet potatoes or yams 1 cup sugar 1 T. vanilla 1 stick butter, softened 2 eggs
Topping: 1 cup light brown sugar 1 stick butter, softened 1/2 cup self-rising flour 1/2 cup chopped pecans, optional
Mix all ingredients for the sweet potatoes and spread evenly in a 13x9 inch casserole dish. Mix all ingredients for the topping and sprinkle evenly over the sweet potato mixture. Bake for 30 minutes at 350º until brown.
