1 lb. crawfish tails
1 1/2 sticks butter
1 small bunch green onions, finely chopped
1/2 cup finely chopped parsley
3 T. flour
1 pt. Half and Half
3 t. sherry
1 4-oz. can mushroom buttons
salt and pepper to taste

Directions:
Directions:
In skillet, saute green onoins and parsely in 1 stick butter. Blend in flour and gradually add Half and Half; stirring constantly to make thick sauce. Add sherry, mushrooms, and crawfish, but not extra butter at bottom of skillet. Season to taste. Serve in patty shells or in chafing dish with Melba toast. This freezes well.
