3 lb boneless beef roast
2 cans Ro-Tel, with liquid
1 cup beef broth
1 shot tequila

Directions:
Directions:
Suggested Ro-Tel variety: "Mexican festival - lime & cilantro"
Place the roast in the bottom of a crock pot and pour all the ingredients on top. Cook on low for 8-10 hours. Serve with rice and beans or shred the meat and use it in tacos or burritos.
