2 boneless chicken breasts
2 Tbsp oil
1 c green bell pepper, chopped
1 onion, chopped
2 tomatoes, chopped
1 package cream cheese
8 10-inch flour tortillas
1 large can mild enchilada sauce
2 cup shredded cheddar cheese
hot sauce

Directions:

Preheat oven to 350 F.

In a large skillet, heat oil over medium-high heat. Use kitchen shear to cut the chicken into bite-sized pieces and cook in skillet until done through. Add onion and green pepper and cook 3 minutes. Add tomatoes and cook 1 minute. Add cream cheese and stir until melted. Turn heat off.

Add 1/2 enchilada sauce in a 9 x 13 glass baking dish. Working with one tortilla at a time, add about 3/4 cup of chicken mixture into center and roll up. Place seem side down into baking dish. Repeat until all tortillas are filled and snuggled into the baking dish.

Top with remaining enchilada sauce. Sprinkle with all of the cheddar cheese. Bake 20 minutes. Serve with hot sauce.

I love Mexican food, but I don't like really spicy dishes. This is a very mild version of enchiladas. Hot sauce can be added to kick up the heat.
