3 slices bacon
1+1/2 lbs thin sliced round steak (like sandwich steak) about 1/4 in. thick (need 6 slices)
2 tablespoons Dijon mustard
6 dill pickle spears
6 medium carrots, cut lengthwise into several pieces
1/4 cup finely chopped onion
2 cans of beefy mushroom or golden mushroom soup (or you could make brown gravy)
1/2 cup celery, chopped
2 tablespoons chopped parsley

In large skillet, fry bacon until crisp, remove and crumble.Cut meat, if needed, to about 4" by 6". Spread each piece with mustard, place a pickle wedge and carrot wedge. Sprinkle with 2 teaspoons chopped onion. Roll-up and tuck ends, fasten with toothpicks or skewers. Brown roll-ups in bacon drippings. After browning, pour off any fat. Stir in celery, soup and parsley.Cover and cook on low heat for 1 hr.15min. Stir occasionally, thin with a little water, if needed. Serve on a bed of rice, garnish with crumbled bacon. You can serve with mashed potatoes or on a bed of noodles, if you don't like rice.
