Ingredients: 2 lbs Beyond Meat ground 1 onion - chopped 1 can. Vegall ( canned mixed vegis) 3/4 cup panko or, oatmeal, crackers etc. 1 Vegg egg (2 tbl + 1/2 cup water)
Mushroom soup substitute:
1 can sliced mushrooms 1 1/4 cup ‘milk’ from this book 1 tbl vegan butter 2 -3 tbl flour 1/2 tsp mushroom powder 1/2 tsp dried minced onion 1/2 tsp Nutritional yeast 1/8 tsp garlic powder 1/4 tsp salt Dash black pepper 1 small bay leaf
2 cans green beans Tator tots to cover Cheese sauce -
1 1/2-3/4 cup thick ‘milk’ from this book 3 slices daiya American cheese 3 slices ciao creamy original slices
Or, your choice of about 6 slices plant based cheese. Or, grated plant based cheese. Salt to taste

Directions:Prepare meatloaf. This is the same meatloaf recipe posted in cookbook - refer to those directions. ‘Omie’s vegan meatloaf’
Bake meatloaf in casserole dish, deep enough for the other top layers-green beans, mushroom sauce and tator tots.
Bake meatloaf without the additional layers on top about 30 -45 minutes.
While meatloaf is baking, prepare mushroom sauce:
Drain liquid from canned mushrooms, and reserve.
Chop mushrooms into smaller pieces, to resemble what canned mushroom soup looks like.
Combine ‘milk’, recipe from this book, with drained mushroom liquid . . . For about 1 1/4 cup liquid.
Melt 1 tbl vegan butter in saucepan. Add chopped mushrooms and sauté lightly. Add 3 tbl flour, stir to combine, and cover the mushrooms. Add remaining seasonings and liquid.
Stir and heat until bubbly and thickened.
Heat tator tots on separate baking sheet, according to pkg directions. While baking . . .
Top baked meatloaf with mushroom sauce and 2 well drained cans of green beans.
Make cheese sauce, and spoon it over the green beans. Pour thick milk into saucepan, tear cheese slices into small pieces, heat and whisk until cheese is melted and sauce is smooth. Add salt to taste)
Spoon cheese sauce on top of green beans.
Line pre-baked crispy tater tots on top of the cheese sauce.
Put back into hot oven for a few minutes to heat everything through. Let set few minutes to meld and set. Serve. |
