- 2½ cups of baked sweet potatoes (about 3 big sweet potatoes)
- ½ stick butter (melted)
- 1 cup half and half
- 1 tbsp vanilla extract
- 1 tbsp bourbon
- 1 cup brown sugar
- ¼ cup maple syrup
- 1½ tsp cinnamon
- ¼ tsp nutmeg
- 3 eggs
- pinch of salt
*Allspice can be used instead of cinnamon

Bake sweet potatoes at 425º for about an hour until soft, poke with a fork to make sure. It saves time if you bake and refrigerate the sweet potatoes a day or two before making the pie.

Pulse sweet potatoes in a food processor or blender until smooth. Transfer to a bowl and add ingredients individually and mix evenly. Add granulated sugar to taste, I usually add about a cup. Mix in the eggs. DO NOT FORGET THE EGGS. I've done it too many times, fail.

Preheat oven to 350º
Put pie crusts in the oven for approx. 10 mins to blind bake.

Let the crusts cool and then pour in mix leaving abut an inch of space at the top. Bake pies for 45-60 mins. The pies should puff up and watch to make sure the crust doesn't burn.
Remove pies and allow them to cool and sink for about an hour before serving.
