Bechamel

- 3 cups of milk
- 5 tbsp of butter
- 5 tbsp of flour

Melt butter for roux in a medium pot. Sprinkle flour in while stirring until it becomes a light brown paste. Be careful not to burn or add too much flour. Gradually add milk to roux and keep stirring until a slight thickness is achieved.
 

Macaroni

- 1 lb of elbow noodles (one box)
- ½ lb of sharp cheddar
- ½ lb of mild cheddar
- ¼ lb of fontina
- ¼ lb of gruyere

Directions:

Grate cheeses and combine them in a bowl, set aside.

Boil the noodles and strain. Toss with 1 tbsp of butter.
Mix the bechamel in with the noodles until evenly coated. Stir in the cheese about 1/2 cup at a time until you have desired amount (as cheesy as you want) and leave some for the to top the macaroni. Add salt and pepper to taste. Put in a casserole dish and top with remaining cheese.

Bake for 30 mins at 350º Wait til cheese is nice and bubbly and edges are brown and crispy.
