2 eggs
2 large cans (or boxes) of tomato sauce
1 small can tomato paste
1 large can crushed tomatoes
1 reg can tomato purée
1 thick pork chop (cut into small pieces)
Leftover roast beef (enjoy a meal and reserve a piece!)
3 bay leaves
(Dried) basil, oregano, and 1/2 tsp cinnamon, 1 tsp sugar
4 cloves garlic
Salt and pepper
1 stalk celery
1/2 onion
Olive oil
1/3 c red cooking wine

Meatballs:
2 lbs lean ground beef
1 lb ground Italian sausage (pork sausage works too)
Italian seasoned bread crumbs
Tex Joy steak seasoning

Sauce:
1) In a 6 qt stock pot, sauté onion, garlic,and celery in olive oil. Add pork chop and brown. Set heat to Medium and add all sauces and paste. Sprinkle across surface area basil, oregano, salt, pepper, sugar, and cinnamon. Add bay leaves and stir. When sauce bubbles, add cooking wine, stir and reduce heat to low simmer. Stir occasionally for the next hour.

2) taste and season as needed, including salt, pepper, garlic powder. At this point add diced roast beef (if available).

Meatballs:

1) Whisk 2 eggs. Combine lean ground beef and sausage, seasoning with salt, pepper, and garlic powder, steak seasoning. Add dried basil, oregano, and celery flakes. Add 1/2 - 3/4 cup seasoned bread crumbs and stir in ladle of spaghetti sauce. Knead into meat, form meatballs and bake at 350 for 30 minutes in broiler pan.

2) Add cooked meatballs to sauce and simmer another hour, stirring occasionally. Serve with pasta and Parmesan.
