4 Boneless and skinless chicken breast
(4 chicken breasts, it will make 8 if you don’t get the thin ones)
Heavy whipping cream about 1-2 cups depending on how much sauce you want
1 shallot minced
1 pkg of pancetta chopped
1 bottle of marsala wine

Prepare chicken. Cut chicken in half and flatten chicken with a meat cleaver I use a piece of plastic wrap use a meat mallet and use the small side. When all the chicken is done, dredge the chicken in flour and fry till lightly brown then take and put it aside, in the same pan sauté shallots and pancetta till crispy , take out when done and set aside then deglaze pan with marsala wine, about cup let it come to a boil scraping the pan to get all the bits, then add the cream depending how much sauce you want use your judgment, add shallots and pancetta to the sauce then your chicken, let it simmer for about 30 minutes.

This is my Aunt Connie's recipe. She is an amazing cook! She organizes the big family dinners and helps keep us all together. I'd say she is one of the Matriarch's of our family.
