Beat 3 eggs till foamy
Add 2 cups sugar
1 cup oil
1 Tbs vanilla
Beat till thick.

Add 2 cups coarse grated zucchini
2 cups flour
1 Tbs cinnamon
2 tsp soda
1 Tbs salt
¼ tsp baking powder
1 cup nuts, optional

Directions:
Directions:
Pour into 2 greased and floured loaf pans. Bake at 350º for 1 hour.
Cool 10 minutes before removing from pans.
