Granny's Christmas Cookies Recipe

Ingredients: 1/2 lb pecans, ground in food processor (or finely chopped) 1 lb butter 1 c white sugar 6 c all-purpose flour pinch of salt confectioner's sugar small paper bag

Directions: |
Directions:Cream softened butter and sugar. Add the pecans and flour in half cup batches, alternating between the two. The dough will become very stiff (I sometimes add a tablespoon or two of milk to help it hold together - don't tell Granny).
Form dough into rolls and chill several hours on waxed paper.
Preheat oven to 350º. Slice into rounds no larger than 1/4" thick. Place on baking sheet and bake for 15-20 minutes or until slightly golden brown.
Fill a smallish paper bag with about 1 1/2 c confectioner's sugar. Remove baked cookies from oven and let cool only 2 to 3 minutes. While cookies are very warm (but not too hot or they'll crumble), gently place them in the bag of sugar and move it carefully back and forth to coat the cookies. Set the sugar coated cookies on cooling racks to finish cooling. Add more sugar to the bag as needed until all the cookies are coated. |

Notes: This recipe was originally Grandma Lucy's. She told Granny to make them around Thanksgiving and put them aside in a tin to "season" for the holidays. (They do get better with time and keep for weeks). Granny made these for every Christmas Eve on Kabel Drive. When Lauren and the Karls moved to Virginia and couldn't come home for Christmas anymore, she began making these. I began doing the same after I got married and found myself in the same situation. They're a little bit of work to make, but I find people go crazy over them. Tim's mother still thinks his favorite cookies are her meltaways, but they're not. I'll never tell.
