2 Tbsp olive oil
1 cup chopped onions
2 tsp chopped garlic
1 green pepper, seeded and chopped
1 jalapeno pepper, seeded and chopped
1 ½ tsp salt
1 ½ tsp ground cumin
½ tsp ground coriander
1 Tbsp tomato paste
6 cups chicken stock
1 pound chicken breast (or use cooked chicken)
¼ cup chopped fresh cilantro
2 tsp lime juice
Tortilla chips, sour cream, tomatoes, shredded cheese

Directions:
Directions:
1. In a Dutch oven or large heavy pot, heat the oil on medium-high heat.
2. Add the onions, garlic, peppers, salt, cumin and coriander for 5 minutes.
3. Add the tomato paste and cook, stirring, for 1 minute.
4. Add the chicken stock and chicken and bring to a boil. Simmer for 20 minutes.
5. Take the chicken out and shred the chicken then add back in to the soup and simmer for 5 minutes. Add the cilantro and lime juice, and stir well.
6. Garnish each bowl with baked tortilla strips (or chips!), sour cream, tomatoes and shredded cheese.

This soup freezes well without the garnish since it doesn't have any noodles.
