cheddar cream cheese

bacon

Slice the peppers in half lengthwise and make a boat shape. Scrape out all the seeds with a spoon (a grapefruit spoon works great). Fill with cheddar cream cheese. Cover with a strip of cheddar cheese and a strip of bacon (held by toothpicks). Arrange on a wire rack rather than a baking sheet.

Bake at 375º for about 25 minutes.
