Poppy Seed Filling:

Pour enough milk on ¾ # ground poppy seed to moisten.

Add ¾ cup sugar. Cook over low heat approx. 5 minutes stirring constantly.

remove from heat, add 2 tablespoons butter and ½ teaspoon almond extract. Cool and fold in two stiffly beaten egg whites.
