1 ⅛ Cups sugar
2 ½ Cups
2 ½ Tsp baking powder
1 Tsp Salt
2 Large eggs
4 Tblsp Butter
¼ Cup vegetable oil
1 cup buttermilk
1 ½ Tblsp Vanilla extract

FOR TOPPINGS: Stir lemon zest and sugar in a small bowl until combined.

FOR MUFFINS: Heat oven to 425º and spray the muffin pan. Bring 1 cup blueberries and 1 Tblsp of sugar to a simmer in pan, smash the berries, cook and stir until the berries have reduced until ¼ cup. Transfer smashed berries into a small bowl and let cool for 15 min.

Whisk flour, baking soda, and salt into large bowl. Whisk the remaining sugar and eggs into separate bowl until completely mixed together. Whisk in butter, oil, buttermilk, and vanilla extract. Mix blueberries in the flour bowl. The batch will be very bumpy and pieces of flour. Do NOT over mix.

Use icecream scoop or large spoon to transfer mixture to muffin pans. Spoon a teaspoon of berry mix into the center of each bater cup. Using a chopstick swirl the blueberry mixture in the center in a figure 8 motion. Sprinkle lemon zest mixture on top of each uncooked .

Bake muffins for 17-19 or until tops are golden brown.
