2 pounds eye of round cut into cubes

1 large oniom diced

4 med carrots cut into med pieces

4 celery ribs chopped

1 large can Guinness stout beer

1/4 cup flour seasoned with salt and pepper

olive oil

beef stock

salt and pepper to taste

Directions:
Directions:
Heat a small amount of oil in the bottom of a oven safe dutch oven, lightly toss cubed beef in flour mixture and brown in batches. Add entire can of Guinness to dutch oven to deglaze the pan scraping up all the bits, Add the meat and the remainder of the ingredients to the pot and add beef stock just to cover the vegetables. Cover and bake at 325 for 2 hours uncover stir and bake another 30 minutes to thicken.

Serve alone or with your favorite crusty bread.
