2 chicken breasts, sliced into strips
1 small onion, sliced
2 fresh roma tomatoes chopped
1/4 cup water
1/2 tsp each dried basil, pepper, garlic powder, oregano & salt
1 pkg (6 oz) baby spinach leaves
1 zucchini, sliced

Directions:
Directions:
Heat oil in large skillet on medium-high heat. Add chicken; cook and stir 10 minutes or until browned. Add onion; cook and stir about 5 minutes or until softened.

While chicken and onions are cooking, in another skillet, heat oil on medium-high heat. Add zucchini and stir occasionally until golden brown. Lower heat to low and salt & pepper to taste.

Stir tomatoes, water and seasonings into chicken and onions. Bring to boil, stirring occasionally. Reduce heat to low; cover and simmer 3 minutes or until heated through.

Stir in spinach; cook 2 minutes or until spinach begins to wilt.
