1 pkg. jumbo shells (24 shells)
1 lb. ground beef
1 sm. onion diced
1-2 cloves garlic minced
1-12oz. can tomato paste
2 cups hot water
3 beef bouillon cubes
1 1/2 tsp. dried oregano
1-16 oz. small curd cottage cheese
8 oz. mozzarella cheese divided
1/2 grated parmesan cheese
1 egg
dried parsley

Preheat oven to 350º
Prepare shells as directed on box, drain thoroughly.
Cook beef, onion and garlic in large skillet, drain excess grease.
Stir in water, tomato paste, beef bouillon cubes and oregano.
Stir and allow to simmer while preparing shells.
Stir together cottage cheese, 1 cup mozzarella , parmesan cheese, egg and a sprinkle of parsley.
Begin to stuff your shells, about a tbsp. of cheese mixture in each.
Put your shells in a 9 x 13 baking dish.
Pour sauce mixture on top of shells and cover with foil.
Bake about 40-45 minutes.
Uncover and sprinkle remaining mozzarella cheese over top.
Bake another 5-8 minutes until cheese is melted.
