Six to eight large zucchini squash
1 pound lean ground beef
1 large onion chopped
4 stalks celery chopped
Chopped bell pepper to taste
Grated cheddar cheese
Salt and pepper to taste

Directions:
Directions:
Cut the tops and ends from the zucchini. Cook until tender either in boiling water on the stove or in the microwave after pricking with a fork. Cut the squash in half lengthwise and scoop out and keep the inside pulp leaving a hollowed out "boat".

Brown ground beef in a skillet until browned. Add onion, celery, bell pepper, and cooked pulp from the squash until vegetables are cooked. Add salt and pepper to taste.

Place the meat mixture in the zucchini shells and place in a baking dish / pan. Bake in the oven at 350º for 30 to 40 minutes. Add grated cheese during the last 10 minutes to melt.

This is one of mother's recipes that I have adapted over the years. I leave off the bell pepper, but sometimes add a bit of jalapeño for interest.
