1 C. Sugar
1 C. Butter
1 tsp. Vanilla
1/8 tsp. Nutmeg
1 Egg
2 1/3 C. All Purpose Flour
1/2 tsp Baking Soda
Extra Sugar regular or colored for rolling cookie in
Parchment paper advisable to line cookie sheets. Just makes clean up easier.

Preheat oven to 375º
In a medium bowl gently stir together Flour and Baking Soda, set aside.
Put extra Sugar in a shallow bowl to future use. set aside
Beat 1C.Sugar and Butter together with electric mixer until fluffy.
Stir in Vanilla, Nutmeg and Egg. Continuing to mix on low speed.
Add Flour mixture one cup at a time, continue to mix until all Flour is well blended.
Taking a good tablespoon full, ball it up in your hands and roll in Sugar.
Place on parchment lined cookie sheet, using the bottom of a glass flatten the ball to about 1/4 inch.
Bake 9-11 minutes.

These cookies are not real sweet, but they are good. If you wish for a sweeter cookie, you can cover with icing and decorate as desired.
