3/4 C pine nuts, finely chopped
3 TBS honey
1 TBS orange juice
1/2 C butter softened
1/4 C firmly packed brown sugar
1 tsp grated orange peel
1 tsp vanilla
1 egg yolk
1 C flour
1/4 tsp salt
1/4 c orange marmalade

Directions:
Directions:
Heat oven to 350. Place pine nuts in sm bowl. In another bowl combine honey and orange juice; blend well and set aside combine butter and brown sugar; beat at med speed until fluffy. Add orange peel, vanilla and egg yolk, beat well. Add flour and salt; beat at low speed until dough begins to stick together. Shape into 1" balls. Roll balls in honey mixture; roll in pine nuts. Place 2" apart and make indentation with thumb in center. Bake at 350 for 9 to 12 minutes or until cookies are set and golden brown. Fill each cookie with 1/2 tsp marmalade.
