18 oz Mahi Mahi Fillets
1 T. paprika
1 tsp cayenne pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp dried italian seasoning
3 garlic cloves, minced
1 red bell pepper, chopped
1 can corn, drained
3 tomatoes, chopped
1 can black beans, drained and rinsed
1 avocado, chopped
1 lemon
3 c. cooked quinoa or rice

Directions:
Directions:
Small bowl- combine paprika, cayenne, garlic powder, onion powder, dried italian seasoning. Mix well. Sprinkle over the fillets.
Heat olive oil in large skillet over med-high heat. Add the seasoned fillets and cook each side until completely cooked. Remove fish from the skillet and pull apart using forks. Set aside.
In same skillet, add garlic and cook about 30 seconds. Add red bell pepper and corn. Cook for a few minutes. Add tomatoes and black beans. Cook until beans are heated through.
Layer the quinoa/rice, veggie mix, fillets and avocados into bowls and serve. You can squeeze fresh lemon juice over them if you prefer.
