1 lb spinach- bag or loose
3 strips bacon

flour
sugar
vinegar

optional - hard boiled eggs

Directions:
Directions:
Clean and wash spinach - set aside

Cook bacon until crisp and break into bits
Add a bit of flour, to the bacon in the pan, to thicken and stir to make a smooth sauce
Add a scoop of sugar (1/3 cup?) and enough vinegar to make a sweet and sour sauce.

Add cut up spinach and enough water to cook, but not spoil the taste.
Add hard boiled eggs.
