4-6 boneless, skinless chicken breasts
1 (48 oz.) jar Randall Great Northern Beans (do NOT drain)
1 (24 oz.) jar Salsa (I use the Chi Chi's Cilantro flavored brand from Wal-Mart but any will work)
4-6 cups Mexican Blend Shredded Cheese
1 (8oz.) can Chicken Broth
2 packets of Taco Seasoning ( I use Taco Bell Brand: 1 Mild and 1 Medium)
Season as needed with garlic, salt and pepper

Tortilla Chips or Corn Chips
Sour Cream (Optional)

Directions:
Directions:
1.Place chicken and broth in a medium size boiling pot and bring to a boil. Reduce heat and simmer till chicken is done. Remove chicken from broth and set aside to cool.
2.In crockpot, combine salsa, 1 cup chicken broth from pot, beans, taco seasoning packet ingredients, garlic, salt and pepper.
3.Shred cooked chicken and add to crockpot.
4.Cook on Low for 4 hours or High for 2-3 hours
5.Add in the cheese and stir till melted


Serve with Tortilla chips or Frito Corn Chips

Sour cream on the side is optional

This is a family favorite! Our motto is the more chicken, the better so we usually go with 6 really meaty chicken breasts plus lots of cheese and spices!
