6 potatoes
4-5 Tbsp mayonnaise
1 onion, chopped small
2 Tbsp white vinegar
1 Tbsp olive oil
1 Tbsp butter
Salt and black pepper to taste

Directions:
Directions:
POTATOES:
In a medium saucepan, place potatoes in salted water to cover and boil until done (when a fork easily inserts into each piece).
Remove from water and cool, but do not let get cold. Peel and slice.

DRESSING:
In small bowl, add the rest of the ingredients and mix until smooth. If necessary, add some milk to thin out.

PREPARE POTATO SALAD:
In large bowl, fold dressing into potatoes to coat.
Add salt and pepper to taste.
