Ingredients:  
1 small piece (about 1 inch) of raw pork off of pork chop or loin of pork
1 large can or bag of sauerkraut (however much you want to make)
Water to cover all the sauerkraut
1 large white potato, peeled and grated (note: if using a large bag of sauerkraut, use 2 medium white potatoes)
1 Tbsp caraway seeds (if you like that flavor)

Directions:
Directions:
To a medium saucepan, add sauerkraut and enough water to cover all the sauerkraut. Add raw pork, grated potato and caraway seeds.

Bring to a low simmering boil and simmer for 4-5 hours, stirring constantly to ensure sauerkraut does not stick to pan and adding more water to ensure the sauerkraut does not stick.

Serve and enjoy!

This sauerkraut has a smooth and sour flavor that is fantastic with pork, kielbasa, bratwurst and hot dogs. Yum!
