2 Pork Tenderloins (3/4 pound each)
2 lbs Red Potatoes, quartered
1 lb Carrots, halved & cut into 2 inch pieces
1 medium Onion, quartered
1 T Olive or Canola Oil
2 t dried Rosemary, crushed
1 t Rubbed Sage
½ t Salt
¼ t Pepper

Directions:
Directions:
Place the pork in a shallow roasting pan coated with non-stick spray, arrange potatoes, carrots & onion around pork. Combine the seasonings ( I double the amount of seasonings), sprinkle over the meat & vegetables. Bake uncovered, at 450º for 30-40 minutes or until a meat thermometer reads 160º, stirring occasionally.
