1 stick butter
½ c. Crisco
½ c. Mayonnaise
2 C. Sugar
5 eggs
2 C. Flour
1 tsp. soda
1 C. Buttermilk
1 tsp. vanilla
2 C. Coconut
1 ½ C. Chopped walnuts

Directions:
Directions:
Preheat oven to 350. Cream until smooth the first four ingredients. Separate eggs, adding yolks, one at a time. Beat egg whites until stiff and set aside. Add alternately flour, with soda that is added to buttermilk, vanilla, coconuts and nuts. Fold in egg whites. Bake in 3 greased and floured pans at 350 degrees for 25 minutes. Check at 20 minutes with toothpick.
 

Cream Cheese Icing

1--8oz. Cream cheese
1 stick butter
1 bag of powered sugar
1 tsp. vanilla
1 ½ c. Walnuts
Heavy whipping cream as needed

Directions:
Directions:
Mix first four ingredients together with mixer. Add heavy whipping cream as needed to make smooth. Beat on high for 5 minutes. Spread frosting between layers and add some walnuts . Assemble and frost remaining cake with walnuts on top.
