1 cup unsweetened non-dairy milk
1 Tbsp fresh lemon juice
2 cups unbleached all-purpose flour
1 Tbsp baking powder
1/2 tsp baking soda
3/4 tsp sea salt
4 Tbsp non-dairy, unsalted butter, plus extra for melting on top

Directions:

1. Preheat oven to 450 degrees.
2. Add lemon juice to the non-dairy milk to make "buttermilk". Set aside.
3. Mix flour, baking soda, baking powder, and salt,.
4. Dice cold butter into cubes, and incorporate with your hands into the flour until only small pieces remain.
5. Make a well in the dry ingredients, and using a wooden spoon, slowly incorporate the buttermilk. Add it 1/4 cup at a time, as you may not need all of it. Stir until just slightly combined--mixture will be sticky.
6. Turn mixture over onto a floured surface, and knead a few times, just enough to cover mixture in flour.
7. Form into a 1 inch thick disc, handling as little as possible.
8. Using a glass, cut biscuits from the dough, gently reforming the dough as necessary.
9. Place biscuits into preheated cast iron so that they just touch- allowing for uniform rising.
10. Drizzle with melted butter.
11. Bake for 10-15 minutes or until fluffy and lightly browned.
