"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Directions:
Place can of evaporated milk into the freezer just before making the jello. Bring one cup water to boil in a small saucepan. Stir in jello until completely dissolved and then add the remaining half cup of water. Let cool slightly and then place in refrigerator to chill. Just before the jello begins to set, pour evaporated milk into a large bowl. Whip until doubles in volume. Whilecontinuing to beat, slowly pour in the cooledgelatin. When all of the gelatin has been incorporated, pour mixture into small bowls or jars or a large bowl. Chill until set. About an hour. Garnish with whipped cream I desired.
