4 cups cooked brown or white rice (I make in a rice cooker but can be made stove top)
1 frozen bag of peas, carrots & corn
1 Tablespoon toasted sesame seeds (toast briefly in toaster oven if not pretoasted)
1 Tablespoon duck sauce
1 teaspoon sesame oil
2 eggs, beaten
2-3 Tablespoons vegetable oil
1/2 cup soy sauce or GF Tamarind sauce (may need more)
1/2 small onion, optional, diced small
garlic powder to taste

Precook the frozen bag of vegetables in the microwave usually 4 1/2 minutes until almost cooked. Set aside. In a large skillet over medium heat, add 1 tablespoon of vegetable oil and eggs. Keep scrambling eggs and chop into small pieces until done. Remove them from the skillet to a bowl. Add 1-2 Tablespoons oil and saute onions until translucent. Then add cooked rice, soy sauce, spices, duck sauce, sesame oil. Use enough soy sauce to color rice brown. Keep stirring until heated through. At the end, add in the cooked carrots and peas and scrambled eggs. Add cut up grilled chicken for a complete meal or serve as a side dish.
