1/2 c. chopped carrots
1/2 c. chopped celery
1 c. chopped green onion
2 c. water
1 sliced medium onion
1/2 c. butter
1/2 c. flour
16 oz. cheese whiz
dash of black pepper
1/8 tsp. cayenne
1 tsp. dry mustard
4 or 6 oz. Velveeta (cut in to cubes)
4 c. milk
4 c. chicken broth

Directions:
Directions:
Boil carrots, green onions and celery in 2 cups water for 5 minutes. Drain. Saute white onion in butter: add flour. Stir in milk and broth. Bring to a boil (but do not let boil). Add remaining ingredients. Stir Continuously over LOW heat until cheese melts - DO NOT LET THIS BOIL.
Serve with corn bread -- Makes about 3-3/12 quarts. This is wonderful!
