8 oz. whole milk fresh Ricotta, purchased from Deli section.

brown paper bag

olive oil

cookie sheet

Directions:
Directions:
Preheat oven to 425 degrees. Take ricotta out of packaging and put in a paper bag.

Spray olive oil on cookie sheet. Put bag on cookie sheet and bake for 20-25 minutes. Let cool completely before using. Is wonderful on pasta!

This recipe is mostly from memory. Baked ricotta is grated on pasta. I remember my Nana making this for my Aunt Tootsie and Uncle Carl. This recipe works best with whole milk ricotta that is purchased from a import store.
