20 - 24 Medjool dates (pitted)
2 ounces goat cheese
12 to 14 ounces medium thickness bacon

Directions:
Prepared oven to 400.

Cut open dates using a paring knife to cut a lit in the side of the date. Using a spoon, stuff each date with goat cheese. Cut each strip of bacon in half and wrap date securing the end of bacon with a toothpick. Arrange dates on a baking sheets and bake for 15 minutes. After 15 minutes, flip the dates to the other side and continue baking for another 15 to 20 minutes or until the bacon is as crispy as you like it. Transfer bacon to plate with a paper towel to drain. Remove paper towel and serve warm.
